Also the way he works the dough; all the way from the extreme kneading in the machine to the way he stretches it while making it into balls and in the end the pizza.

well, i was thinking most people wouldn't have access to that kind of thing. the most important aspect i know of about making the dough is to use high-gluten flour (like pastry flour) to get the critical elasticity.
