You can count many things that need knobs, switches, levers, and displays in a jet to control and monitor, aviation stuff, fuel, engines, wheels, weapons and fighting, communication, radar, emergency, and other things, but it's the man who will employ all of them..
And not only do you need to know what the buttons and knobs do, you also have to know which electrical buss they are connected to and where that power comes from.

Look at the new aircrafts, especially Airbus. Most actions are made by the aircraft. More and more glass are introduced. In the Embraer I fly the only clock-like instrument in the cockpit is the clock.
