The Carolina BBQ is anything but.
NC BBQ comes in 2 major varieties:
Eastern (or Smithfield) Style: vinegar-based, and typically avoids any extra ingredients like ketchup, mustard, etc.; and
Lexington: basically, the vinegar style with a little ketchup thrown in.
That's it. No mustard (commonly found in SOUTH Carolina style BBQ), no liquid smoke, no butter, and most certainly, no soy sauce.
