NY or Phila PA is the best & Chicago deep dish is not Pizza -- its a thick sandwich with extra garbage meat you don't need. The Temp of a pizza oven is 850 to1100 degrees Fahrenheit. Home ovens at 550 won't cook all the dough throughout.
i'm a tough critic of pizza, but that crust looks magnificent for pan style! but you ask, why do it by hand...?

Here in Brazil we are used to have a big difference between professional and home made pizzas, and that is because the home made ones don't have the "catupiri*" boarder. Basically, they spread the boarder of the pizza so they can fold it back on top of a ring of catupiri all around the pizza's boarder. That filling is guava jam on sweet pizzas. *catupiri - google if u want.
aquiring some cooking basics, fun and easy to do, cheaper than bought, and you can be creative. so why go and buy one ? except when eating at a very nice italian restaurant.
