On a side note related to #2 and #3. Nothing you eat in a chain restaurant called cajun, creole, or New Orleans style is going to actually taste like cajun, creole, or New Orleans style food.

As a person who grew up in Louisiana and has moved around the country, it is laughable to see those labels in restaurants and then try the food. Remember folks, hot does not equal Louisiana food.

One of the worst related cases I've seen was a gumbo contest in Tennessee where large numbers of entries were only "inspired by gumbo." None of course made it past the first judging round.
