It's called theater. It's called acting. The Cowardly Lion in The Wizard of Oz wasn't played by a real lion, either.

In the Harry Potter series, Shirley Henderson was 35 years old when she started playing Moaning Myrtle, a 14-year-old.
Henderson was born in 1965, and the first Harry Potter movie came out a few days shy of her 36th birthday in 2001.
