So this is usually when an unripe mango gets harvested and processed. They get put into a tub of hot water to kill off bugs and this causes the metabolism to increase but without oxygen( since they’re in a tub) a fermentation process occurs instead. The holes are made from the carbon dioxide buildup and the mango never properly ripens.
