Kate, If your mashed potatoes are coming out gummy, you're using the wrong potato. White potatoes and red potatoes come out like glue. Use russets. They're the best for fluffy mashed potatoes. I use a stand mixer I've had for decades. My mash comes out fluffy every time.
We (in Belgium an I guess France) use 'passe-vites' (French) or in Dutch 'draaizeef'. Look it up, I don't know the English word for it. It's a bit of work to mash your potatoes, but hey, isn't it the result that counts? Never use a mixer, for wathever sort of potato!
