No 8. Honey has no real expiry date and does not go off as it has no water in it. Bacteria, molds & spores require water to grow. The point about enzymes, a load of rubbish.

Melt Crystallized Honey To Get Its Texture Back

For the jars that form crystals, we put the (glass) jar in a pan with a little water and bring it to a simmer.
