As a former restaurant manager, one valuable lesson that I learned was NO ONE wants their hour cut or you may lose an employee. So, you go ahead and schedule everyone and then say, "It seems to be slow so if anyone want to go home"....you can't finish sentence before the entire crew is nearly in a fist fight wanting to be the one to go home, even if they just got there. Strange breed, these restaurant people!
