That particular plant, epipremnum pinnatum, is very hardy and can go months without being watered, 2 months was the longest I ever tried, with no apparent deleterious effects.
If someone comes around every few weeks or so and waters them they would still grow. Person in question might not know that the support staff still maintain the building even without the office workers there so they are amazed that someone was working hard on growing while they were gone and post it on intertubes.
