8-9th grade Biology here... Little simplistic model but close enough:
Suppose she carries a mix of blue-Brown eyes (capitalized is dominant), getting green-ish phenotype herself than married a blue-blue eyed husband, chances are good that half of her children will get blue and half will get a Brown-blue mix, Mystery solved.
Hair and eye color are not necessarily linked, also possible and relatively common to have VERY light hair color as a toddler (like 0 to 4y) and get a much darker shade later in the childhood.
It is also possible to carry alleles for a certain phenotype without expressing them or doing so partially, as reallity is rarely as clear and dry as simple either or Mendelian inheritance, recessive traits do jump generations. She would need to look at both her own parents and her husband's parents at least to get a clearer view.
