Swedenland schools in my district has fish on tuesdays almost every week, then a "environmentaly smart day" (almost anything that was not served, mostly meat options) and vegetarian on thursdays.
Considerably more variety than shown on pictures here, look on skolmaten.se (school food) - 5+ different salads as well as potatoes, rice, pasta etc are not written out but are available alongside to all the meat/fish options otherwise. Also you get to eat as much as you whant and it is always free for students, up to Uni.
