Do they refrigerate this Parmesan Wheel or just leave it out all day and night to cultivate additional bacterial growth now that it doesn't have a hard crust?

not bad; that will bee 200 euros. (Also they do put the cheese in the refrigerator at night; and cover it with plastic wrapper. I have seen it in the restaurant)
