Surely if an asteroid is loose debris held together by its own gravity, it would be a sphere (most of the time)?

no. a sphere requires much more mass than that of an asteroid. gravity is actually a very weak force. the debris only has faint attraction towards itself, but in the absence of other influences in space, it is enough to keep it together.
