plates are plastic therefore hardly a restaurant. they probably have a high pressure, high temp. washer and this guy is taking soap rest off (or what ever) but definitely no food rests (look how neatly they stack when he starts.

It is very possible that he is doing a ¨pre wash¨ before putting them into a dishwasher. That is what most restaurants do.

...and you would know all about that dang8521 since you probably are a part-time dishwasher at some slophouse restaurant despite being over 30 years old.
