renew would be a better word choice, but restore is acceptable

Renew sounds wrong, what the dude did was to Sharpen the edge and Polish the blade. Also entire knife having uniform but ultra light surface rust that washes away with a detergent and scrubby sponge smells a bit like someone intentionally "forgot" about it after a vinegar bath.
