In some of the examples nitrites becomes nitrates and in others it's vice versa... It's just bullsh#t. All of these things can be reheatet without any problems.

Completely BS like most similar posts found on Facebook. Celery is used in mini recipes not just salad and is reheated for serving. There are literally millions of servings of food with celery produced in commissary kitchens and then frozen to be reheat it later.
