It's easy to say she should have known but it is frightening the first time and I understand you don't know what to do if you haven't experienced it before.

For anyone reading this: If it happens, NO water. Throwing water on a oil fire creates a huge flame that can easily reach, and ignite, your ceiling.
Instead, deprive the fire of oxygen, simply put the lid, another frying pan, cutting board on top of it and it will go out.
If you don't have that, get a cloth, quickly wet it under the faucet and rinse it making it damp, not wet, and put that over it so it rests over the edges.

1. Turn off the stove; 2. Place something over the pan to smother the flames. 3. All nonsense aside, she can consider herself very lucky not to have suffered any burns when she moved the pan from the stove to the sink and back again with the burning oil spilling out.
