#16 Yes your supplier hates you. You are gonna lose at least 15% of that weight in just the head and skin. And the meat quality of a whole halibut is very different when it's a barn door size (over 50lbs) than a smaller one. Bigger ones have grainer texture and spongy meat, smaller ones are firmer and smoother meat.

#43 Pudding. Lots and lots of pudding. And creamy soups. And fancy sauces... lots of ideas, but mostly pudding.
