That's what I call a full-blown eating disorder.
1 10 in flour tortilla
4 slices of tomato
cheese (amount to suit you, i use Mexican blend)
breakfast sausages
Cholula Hot Sauce
2 to 3 eggs
heave cream
salt and pepper
in a large no stick pan add a table spoon of vegetable oil and spread around with a brush covering the pan, turn on low and put the tortilla in and let it sit there
mince the sausages
scramble the eggs with heavy cream and add the hot sauce, sausages, cheese, salt and pepper
pour this over the tortilla, add the sliced tomatoes to half of the tortilla
cover and let simmer for 5 to 7 min
the eggs will be cooked and nice and fluffy, remove the cover and using a spatula flip one half of the tortilla onto the tomato side.
slide this onto a dish and cut in half, let cool for a min or 2 and get a cup of coffee and juice, enjoy
i usually make home fries using read potatoes chopped, salted and peppered (sometimes i add red crushed chilly peppers and toss them in a large stainless bowl with oil) fry them on my griddle moving them around till they're nice a crispy, be careful with the crushed chilly peppers, i added too much one time and they were super hot
